COMFORT FOOD FOR A FRIEND for "Open House"


Ah......Comfort Food.....sometimes we just need it.  My friend needs it!  She recently had major cancer surgery and  I am glad to see her progressing.  Today I am taking her lunch:  Goulash, Jalapeno Cornbread, fresh Cantaloupe, and Bacardi Rum Cake.  The floral is from my garden flowers and roses from the market.




Elsewhere on this blog, I have included recipes for the Bacardi Rum Cake and the Jalapeno Cornbread (http://bernideensteatimeblog.blogspot.com/2009/03/jalapeno-cornbread.html.  But the goulash is basically: 8 oz of prepared boiled macaroni, 1 1/4 lbs  ground beef which is fried with 1 chopped onion and 1/2 chopped large green pepper and 1 Tb butter, salt and pepper to taste, 1 can chopped tomatoes and 1 can condensed tomato soup and shredded cheese for the top.  Bake at 30 minutes at 350 degrees.
