USING UP THE PUMPKIN BUTTER


For Christmas we received a jar of Trader Joe's Pumpkin Butter so I decided to make Pecan Pumpkin Butter Bars:


This was an easy recipe and only look a few minutes!  This would be good for a Fall Afternoon Tea Party:




 Pecan Pumpkin Butter Bars:

2 cups flour, 1 1/2 (1 1/4 high alt) cups sugar, 4 tsp (3 tsp high alt) baking  powder, 1 tsp salt, 1 cup buttermilk,1 ½ tsp vanilla, 2 sticks melted butter
(1 cup), 2 cups chopped pecans, 1 ¼ cup pumpkin butter:
* grease and flour 9 x 13 baking pan
* preheat oven to 350 degrees
*Mix everything but pumpkin butter
*Spread firm batter into pan & spread
pumpkin butter on top &
swirl through with knife ***Bake 35 minutes

That pumpkin butter is great on toast, I've never cooked with it, though. Good to know!
