CARL'S HOLIDAY SCONES









I SAW THIS WONDERFUL RECIPE in the "Tea House Times Cookbook" and called Carl Povlick, Innkeeper at the Naeset-Roe Inn in Wisconsin to get permission to print the recipe on this blog!  Carl was so sweet to let me!  You know what great bakers Innkeepers are so are you ready for some Holiday Scones?  Carl's are so lovely!  You know those little plastic cartons of candied fruit at the grocery store? Preheat the oven to 375 degrees: Here is what we your will need to make them:


2 cups of flour, 1/4 cup sugar, 2 tsp baking powder (reduce in high altitude to 1 1/2 tsp) , 1/8 tsp salt, 1/2 tsp cinnamon, 1/2 tsp all spice, 1 stick of cold unsalted butter, 1 large egg lightly beaten, 1 tsp almond extract, 1/2 cup heavy whipping cream, 1 cup of candied fruit, chopped.


The egg mixture for brushing scones: 1 large egg, lightly beaten and 1 Tb heavy cream whisked together to brush on top before baking.  Place rack in center of oven and line a cookie sheet with parchment paper. In a large bowl sift cry ingredients.  Cut the butter into small pieces and blend into the flour mixture with your hands or a pastry cutter.  Work it until it looks like course crumbs. Add chopped fruit and the beaten egg,cream and almond extract.
Add this mixture to the flour mix.  Stir with a fork until just combined.  DO NOT OVER MIX.


Turn dough out onto a lightly floured surface and knead dough gently.  Roll out and cut with a scones cutter. Parchment paper works great on top of your baking tray.  Brush tops with egg and cream mixture.  Bake for 15 minutes or until lightly browned.
Transfer to a wire rack to cool.  Serve with jam, lemon curd, butter or my favorite - clotted cream!








 I hope you have a started a collection of scone cutters in various sizes - they do come in handy!

BAKING WINTER SQUASH: Butternut!



Winter Squash is wonderful!  These 2 butternut squashes make a tasty casserole that is easy to make.  Preheat your oven to 350 degrees.  Wash and cut the squash in half, scoop out the seeds and pulp (I feed these to the squirrels) and cut into pieces to boil in a large pot. When tender, remove and peel off the outer rind.  Put the soft flesh in a large bowl and mash it. (should be about 3-4 cups) I use the pastry cutter. 
 Add to this:
1 cup sugar, 2 beaten eggs, 1/3 cup milk, 1/2 cup melted butter and 1 tsp vanilla extract.  Mix well and put in a buttered casserole dish.



 The topping will go on next before it goes in your oven. Mix: 1/2 cup brown sugar, 1/4 cup flour, 2 1/2 tsp melted butter and 1/2 cup chopped pecans.  Sprinkle on top evenly.  Now....Bake at 350 degrees for 30 minutes.

A BEAUTIFUL CHRISTMAS SALAD FOR "Friends Sharing Tea"



Several friends have told me they are having an evening HIGH TEA DURING THE CHRISTMAS SEASON.  This is a complete multiple course meal with hot tea as the beverage.  This salad would be wonderful on your menu!


Time to pull out all those lovely Christmas Recipes and enjoy the wonderful dishes of the season.  Many years ago - actually back in the 70's - Marilyn Long of Des Moines, Iowa gave me this recipe.  I just made it this week and was reminded of many wonderful Iowa memories.  You will love it for it's color alone!






To make this congealed salad, you will need the following: 


 1 10 oz frozen raspberry package drained (reserve syrup)
2 3oz packages of raspberry jello
2 cups boiling water
1 pint vanilla ice cream
1 6 oz can pink lemonade
1/2 cup chopped pecans








Thaw and drain the raspberries reserving the syrup.  Dissolve the jello in boiling water, add ice cream by spoonful and stir in till melted.  Stir in reserved raspberry syrup and lemonade.  Pour into a ring mold.  Chill until partly set.  Add raspberries and nuts.  Chill till firm. Turn out on a favorite plate on cake stand.

FRIENDS SHARING TEA FOR THANKSGIVING



This is my last "Friends Sharing Tea" before Thanksgiving next Thursday.  Whether you are sitting at your own table or going to someone else's home or a restaurant - be sure and enjoy the moments and think of all you have to be thankful for! I will be taking a break for a week to enjoy life!






Our Canadian friends have already celebrated their Thanksgiving weeks ago....many of my blogging friends all getting ready for Christmas now.  



I look forward to making some yummy foods and do some baking as well.

ANGELA McRAE'S NEW TEA BOOK

TODAY the mailman brought a surprise!  I saw a padded envelope laying behind the counter and opened it - surprise.....Angela McRae has written a lovely new tea book "Dainty Dining" which includes recipes, memories and memorabilia from America's department store tea rooms.  I was thrilled to see her research on all these special places from our past. I personally am thrilled to see the old Younkers Tea Room because I went there twice while attending a small Bible College in Des Moines, Iowa in the late 60's-70's.  Senior banquets were often held there. I remember getting off the elevator Angela mentions in her book. At that time I recall feeling like the decor was "old" and charming.








I was deeply touched to read Angela's "Acknowledgments" in the front of this book and see my name listed there among her "blogging" friends.  We have never met, but we have communicated leaving comments on each other's blogs!  I started blogging in June of 2008 and Angela was one of the first to leave me a comment.  (on a former Wordpress blog)  You can visit Angela's Tea With Friends right here!

FRIENDS SHARING TEA AND GETTING READY FOR THANKSGIVING!




Thanksgiving and Christmas are truly delightful times of the year!  The colors of each occasion, the smells in the kitchen and the table laden with decorations, faces and delicious foods....WELCOME TO FRIENDS SHARING TEA!

Don't you find this to be the most wonderful time to bake as heat in the kitchen is no longer a problem?  Cookbooks are piled on the kitchen table awaiting research!  File folders have been pulled to reveal past holidays and past menus.






We have had many occasions to fire up our woodstove and I find myself sitting at the kitchen table nearby reading recipes.  This is the perfect time of the year for FRIENDS TO SHARE TEA!

I have been spending quite a bit of time going through recipes for ideas for this years celebration of Thanksgiving. I always want to learn new things - new recipes.  There is so much to learn even about all the different types of squash!  You might consider adding one new dish to your menu each year.... CANNING IS FUN!

I am always enchanted with any new canning book that is published and Gloria Nicols just wrote a winner!  There is a basic section in the front of the book with canning basics that train you and prepare you!  Then come the wonderful recipes and by the way - perfect for us AFTERNOON TEA LOVERS who want to make lemon curd and jams and marmalades and can them too!





The recipes in this book are unique - I love combining unusual fruits and creating fabulous combinations like the gourmet food companies do! 


 One example of many is Lemon and Fig Marmalade!









If you are interested in learning something new - I recommend this cookbook!  Take for example, Apricot Chutney - so often restaurants serve chutney's on top of steaks.  You can make them yourself and surprise everyone!  This Holiday season, food gifts are perfect!






Gloria Nicol's lives "on the border between England and Wales" in a rural setting.  I imagine she has a lovely garden too!

ANOTHER GREAT TEA TIME RECIPE BOOK: TEA WITH BEA



Here comes another great recipe book loaded with recipes such as Lavender Shortbread, Spiced Pumpkin Cheesecake, Lemon Curd and Red Velvet Cake!  And....these a recipes from Bea's of Bloomsbury located in the heart of London since 2008.






I don't think you can have too many cookbooks or tea related cookbooks!  I sit at my kitchen table and read them like the newspaper.  I compare scone recipes right and left and get so many great ideas!

NANA'S SEWING ANOTHER SOMETHING SPECIAL FOR LILY



I think I have been bitten by the bug - sewing for my grandaughter!
I loved sewing for my kids when they were little, always dreaming up something new for my daughter - now years later, I am having fun with sewing again.  I have an old White Sewing Machine from the l970's.  No serger - I just zigzag the raw selvage edges.  This time the theme was OWLS - LOTS OF OWLS!











This was made with an official pattern which I found so much easier!  I just wanted to share my project.  Also, I bought her a pair of  hot pink leggings and a long sleeve T shirt to go underneath!

FRIENDS SHARING TEA AND MOVE OVER IN THE KITCHEN!

Welcome to Friends Sharing Tea.  I wanted to share this picture painted by Doris Lee back in 1935........especially since Thanksgiving is coming in a few weeks!














And the reenactment that was in the 1987 edition of Country Magazine.....the kitchen seems to always be the heart of the home!  Can't you just smell it!




I want to encourage everyone to think now about sharing your table and bounty with others less fortunate this Thanksgiving . I don't know about where you live - but earlier this year our unemployment in Colorado Springs was 10%.  Find someone who needs a lovely meal and have them join you at your 
Thanksgiving table!

MORE SNOW THIS WEEK IN COLORADO
