BRUSCHETTA - ALWAYS A FAVORITE !



We are big Bruschetta Fans at our house!    So easy to make and a healthy alternate to red meat!



My friend, Ruth Chandler has the most wonderful cookbook at her church (her hubby is the Pastor of Freedom Baptist).  Ruth is an excellent cook and this is her recipe.  I make mine a little different but similar!


I like to brush olive oil on my french bread and grill it on both sides first.  I first saute mushrooms in butter and garlic.  I add to this and saute garlic (you must get a garlic press if you don't have one), green peppers, and lastly I add chopped tomatoes.  I also add fresh chopped basil.......from the garden!





         Oh yummy.....something easy and quick to make!
Put shredded mozzerella cheese on top and put it under the broiler!  You will love it!

We love bruschetta at Linderhof but don't have it often enough!

I have never had bruschetta this way before. I make it often, but it is always uncooked. I have never sauteed the veggies, nor have I broiled cheese on it. But it sounds fabulous, so I will definitely have to give it a try.

Bernideen, I love bruschetta, and I will have to try your topping as well. I have four different ones, so I would love to add another. Thank you for sharing your recipe. My favorite is a caprise which is basil, mozzarella, and tomato. My daughter's favorite topping is warmed brie with fig preserves.
