We are big Bruschetta Fans at our house! So easy to make and a healthy alternate to red meat!
My friend, Ruth Chandler has the most wonderful cookbook at her church (her hubby is the Pastor of Freedom Baptist). Ruth is an excellent cook and this is her recipe. I make mine a little different but similar!
I like to brush olive oil on my french bread and grill it on both sides first. I first saute mushrooms in butter and garlic. I add to this and saute garlic (you must get a garlic press if you don't have one), green peppers, and lastly I add chopped tomatoes. I also add fresh chopped basil.......from the garden!
Oh yummy.....something easy and quick to make!
Put shredded mozzerella cheese on top and put it under the broiler! You will love it!
