I am inviting you into my kitchen to enjoy some lovely Pink Lady Pie! I was given this recipe many years ago (1980's) by Wilma Pfadenhauer who lived in Burlington, Iowa and had large rhubarb plants in her yard. In Iowa a house isn't complete
without rhubarb. I planted one plant here in Colorado last year and see it is coming up this spring!
This pie is easy to make for your family. For the crust you will need: 1 1/2 cups sifted flour, 1 tsp salt, 1 1/2 Tb Sugar, 1/2 cup oil and 2- 3 Tb milk. Mix this all in a bowl and make a nice dough which you can roll out on the cheesecloth. I found flipping the cheesecloth over the pieplate worked. Bake this shell at 350 degrees for about 15-20 minutes and sit aside to cool.
For the filling you will need: 2 cups of diced rhubarb, 2 cups of fresh strawberries cut in half, 1 3 oz pkg of strawberry jello, 1 cup sugar, 1 Tb lemon jice, and 2 cups of whipped cream. The 2 cups of whipped cream can be created by whipping together 1 1/4 cups whipping cream and 1/4 cup of confectioners sugar.
Cook the rhubarb in and saucepan with the strawberries and sugar until tender. Add the jello and stir until dissolved. Let cool and add the lemone juice and fold in the whipped cream. Pour into the cooled pie shell and refrigerate.
