Last night after our recent huge snowfall, gingerbread sounded like a wonderful idea!  If your pantry has the basics you can always make some gingerbread...

Gingerbread ingredients:
3 eggs, 1 cup sugar, 1 cup molasses, 1 tsp cloves, 1 tsp cinnamon, 1 Tb. ginger, 1 cup chopped pecans, 1 cup oil, 2 cups sifted flour, 1 tsp baking soda, 1 cup boiling water.  Mix all dry ingredients first -  then add eggs, molasses and oil and beat well. Pour in the boiling water and mix.  Add nuts last stirring through.  Bake at 350 degrees for at least 30 minutes in a 9 x 11" greased the floured pan.  Cool

After cooling spread cream cheese frosting on top and sprinkle 1/4 cup of chopped walnuts on top.  Ingredients for frosting:  3 oz cream cheese, 3/4 cup of powdered sugar, 4 Tb softened butter.  Beat all together till fluffy and spread on cooled gingerbread.
