Tea Quote

Low Tea - the afternoon tea - was created as a time for a light snack with tea served in sitting rooms at the low tables near the sofa and chairs. Low Tea is actually the more formal tea. (From 365 Things Every Tea Lover Should Know)

Mabel Everhart and Phyllis Cheshier Teach the Younger Women

Titus 2: verses 3-4
Verse 3: The aged women likewise.....Verse 4: That they may teach the young women to be sober, to love their husbands, to love their children.

"The Older Women Teach the Younger"
Back in the late 1970's I was a young married mother with 2 preschoolers who enjoyed homemaking. My husband and I were a part of Warwick Assembly of God Church in Newport News, Virginia. I still use many recipes from the church cookbook put together by Phyllis Cheshier. Actually, we called her "Sister Cheshier" as a sign of respect - after all she was the Pastor's wife and really a Pastor herself! I was thrilled recently when I found her photo above on a church website in Arkansas. Now in her 80's - she still teaches an Adult Sunday School Class!

I was involved in the Women's Ministry at Warwick where we younger women were taught by the older. This is a principle taken from the early church in the New Testament and Titus Chapter 2. One of our regular Bible teachers was Mabel Everhart, a dedicated saint in the church. Mabel made the best Applesauce Cake and of course used her home canned applesauce. After asking her several times, she gave me this recipe which follows: I suggest you buy the better quality applesauce at the grocery should you not have some home canned of your own! You will love the way your house smells
when you bake this cake! Do not use an electrix mixer and always dump this cake out of the tube pan when it is warm! (I waited until the morning and the top stuck)

Mabel Everhart's Applesauce Cake
You will need: 2 cups applesauce, 2 cups granulated sugar, 1 cup butter, 2 tsp baking soda, 2 tsp ground cinnamon, 1 tsp ground cloves, 1/2 tsp ground nutmeg
Also: 2 1/2 cups sifted flour, 1 cup raisins, 1 cup chopped walnuts and 1 cup chopped pecans

In a medium pot combine the 1st ingredients over low heat and melt together. When combined, take from stove and place in large bowl...HAND MIX in flour, and stir in walnuts, raisins, pecans....Bake 1 hour at 350 degrees in a tube pan.
(Altitude adjustments: DECREASE BAKING SODA TO 1 1/2 TSP AND USE
1 3/4 CUPS OF SUGAR)
This cake probably would taste the best in the FALL OF THE YEAR!

Collecting Vintage Linens

Today I am borrowing the photos from my old word press blog to talk again about collecting vintages linens....imagine the hours that went into these old crochet pieces...

Whenever I see the work and time that went into hand applique I am amazed!

I was always attracted to these types of pieces although I never learned to do these things myself...

I am especially drawn to anything with a teapot motif!

In my collection I have pieces that represent different seasons...I love the grapes in the fall....

Strawberries scream springtime......

This cherry set is pure fun and perfect for a picnic!

Every antique mall in America is full of these vintage linens and prices now are very good....begin the hunt and have fun! Keep your eyes peeled at garage sales too!

Blueberry Cheesecake Bars

You will love these Blueberry Cheesecake Bars...preheat the oven to 350 degrees...
For the crust bottom layer you will need:
1 3/4 cups of flour, 1/2 cup confectioners sugar, 1/2 tsp salt, 2 sticks unsalted cold butter cut into small pieces, 1 tsp cold water

For the Filling you will need:
2 8 oz pkg of softened cream cheese, 1/2 cup sugar, 1/2 cup flour, 1 tsp vanilla extract, 2 eggs and 1 cup blueberry pie filling

Butter a 9 x 13 casserole pan. Mix the flour, sugar and salt to in large bowl. Add the butter and continue to cut through. Add the cold water and punch dough to form ball. Press into bottom of casserole to form a crust and bake at 350 degrees for 20 minutes.

Now, after this crust is baked - let it cool. In the winter I often put things out in the garage to cool since it is cold out there! I also have an extra refrigerator there which I use. I cook a lot so it sure comes in handy!

To prepare the filling: Mix the softened cream cheese, flour, sugar and vanilla until they are creamy. Spread on top the crust which had cooled and then swirl the cup of blueberry pie filling all around staying away from the very edge of the pan.

Bake at 350 degrees for 33-35 minutes watch closer than I did as mine were a little brown ...refrigerate when cool. Cut into small squares - 48 in all!

Mine were a little browner than I would have liked but didn't look bad after I cut them....this recipe made 48 squares!

This is perfect for your Afternoon Tea Party...a lovely sweet bar that is easy to make!

Crab Stuffed Mushrooms

Here is your recipe which will make delicious mushroom appetizers:
Purchase 36 medium white or 18 large portabello mushrooms. I did only 18 medium so I froze 1/2 of my "stuffing" after I made it!

You will also need: 1 12 oz package lump crab meat, 1/2 cup fine breadcrumbs, 2 shallots or cut up 2 green onions, 1/2 of a diced green pepper, 1/2 of a diced red pepper, 2 eggs, pinch of black pepper, 1/2 tsp garlic salt, 1/4 cup Parmesan, 1/4 cup Romano, and mixed together: 1/4 cup lemon juice and 1/4 cup of melted butter which will be poured over the tops at the end.

Preheat oven to 375 degrees......in a medium bowl place clean diced crab meat, add peppers, onions, bread crumbs, pepper, garlic salt, eggs and Parmesan and Romano cheese. After stuffing mushroom caps by hand, pour lemon juice and butter over all. I like to finish with a cup of shredded Mozzarella and Colby cheese. Bake in oven for 20 minutes.

You've had them in restaurants....make them at home!
