Strainers and Infusers - Are They Confusing?

What are all those tea gadgets anyway?

Learning how to use strainers and infusers can be loads of fun! It really is pretty simple once you understand the difference....


Below is a strainer which is used when loose tea is placed in the tea pot and boiling water is added to the prewarmed teapot! The strainer"top" is placed over your lovely cup and then you simple pour your tea through it catching the tea leaves so they don't go in the cup. Then the strainer is placed back in it's own or another small dish. (teapots should be prewarmed with hot tap water which is poured out just before adding boiling water so as not to"shock" your teapot and crack it!)


Infusers on the other hand hold the tea leaves. See the infuser basket at the top right. Unscrew or open the infuser basket and fill to the top of the lower section with loose tea leaves which when wet will expand into the other section. Place in the teapot and pour in the boiling water. (Follow prewarming instructions above for teapot) When the tea has steeped your desired time remove the basket to a small dish. Your tea is ready my dear!

Dessert Fondue for Valentines Day!



Back in the late 60's and early 70's fondue became quite the rage. When I got married in 1968, I quickly began to accumulate pots and those long handled forks. I have never been one to get rid of "items with hospitality value"....so I still have them all!

We had lots of people over to our home for fondue in the 70's and usually combined the event with playing monopoly.

Here is how it worked: my husband would take apart our dining room pedestal table placing the top on the floor...we set on pillows down on what we thought was "lovely shag carpet". We would serve the fondue in courses- first a salad and cheese fondue with breads, then an oil pot for shrimp and a separate oil pot for steak and pieces cheese coated in bread crumbs and spices. Lastly, came the dessert fondues which I would like to share here.....

You can purchase a lovely pound cake for the dippers at the grocery for both of these.

Cut it into nice 1 inch squares.

CHOCOLATE FONDUE: 6 squares unsweetened chocolate, 1 1/2 cups of sugar, 1 cup whipping cream, 1/2cup butter,1/8 tsp salt Melt the chocolate in saucepan over low heat - add other ingredients stirring about 5 minutes. Pour into fondue pot and place over burner with lid partly closed to keep flame down. Spear dipper into chunk of pound cake and then into chocolate - serves 6 -8

CREAMY RASPBERRY FONDUE; 1 4 oz container whipped cream cheese, 2 10 oz pkgs of frozen raspberries, thawed, 1/4 cup cornstarch, 2 tb of sugar Let the cream cheese come to room temp. In sauce pan crush raspberries slightly. Blend together cornstarch and1/2 cup of cold water; add to berries. Cook and stir till thick and bubbly. Pour into fondue pot and add cream cheese stirring until melted. Keep flame on low. Spear pound cake cubes and dip into mixture...serves 6- 8 Fruit slices also make yummy dippers!

Collecting Tea Time Spoons



Collecting Tea Time Spoons is part of the tea lover's pleasure. Displayed on antique lace below are spoons for measuring loose tea, spoons for granulated sugar and cubed sugar and spoons for just about anything!

Antique malls around America are loaded with unique small silver plate and sterling silver spoons. I have no problems using a spoon for something other than it's originally designed task. You may not agree to that- you'll have to sort that rule out for yourself!

You might like to keep some out on display with your other tea things in a creamer.

You can enhance this with an old vintage hanky!

Open your buffet drawers and see what treasures may await you inside...perhaps something grandmother gave you!

The photo - lovely number 6- is part of my collection of Vintage Linens...I do love those old handmade gems that I would have never had the patience to embroider!

My grandmother taught me to iron them by pressing the iron on the backside with steam so that the needlework area pressed forward. Do people still teach people to iron? What is an iron anyway? Maybe irons are now ANTIQUES too!

Chocolate Peppermint Brownies





















Turn the oven on and get ready to bake some delicious Chocolate Peppermint
Brownies......Perfect for Valentines Day and perfect for that Chocolate craving......

Here is what you will need:
4 squares unsweetened baking chocolate, 2 sticks butter, 4 eggs, 2 cups sugar, 1 cup sifted flour, 1 cup chopped nuts
For the mint filling:1 lb. confectioners sugar, 1 stick butter, 3 Tb milk, 2 Tsp peppermint extract, 1/2 tsp vanilla extract, Green food coloring

For the Glaze on top: 2 squares unsweetened baking chocolate and 4 Tb butter
Get started:
In a med. bowl, beat the eggs and the sugar. Add the flour to the egg mix and beat well. Beat in the chocolate and then fold in the nuts. Bake at 350 degrees in a greased and floured pan 11 x 16 for 25 minutes.


Combine the mint filling ingredients and beat till smooth. Spread as smoothly as possible on the still  warm brownies. Chill.

Lastly....Melt the chocolate and butter glaze ingredients together in a small pan and brush on top of the filling. Chill well and cut brownies into small squares! DELIGHTFUL!

Tea Brings Great Pleasure!

I have enjoyed learning all I can about having Tea Parties and using the opportunity to enjoy time with other women. Many younger women should consider having a tea party for another reason. I learned as a young woman that Mexican food was very "affordable". Guess what? So is tea! I didn't always have beautiful Old Country Rose China! In fact, I just got this earlier last year "by chance" for my 40th anniversary...for many years I used mix and match china! Winter and books are a natural as we sit by the fire and keep warm during these cold winter nights.
Many former tea room owners have self published great spiral tea recipe books....when I know that someone ran a tea room for for years I realize they aren't novices. I always respect a self published tea book that gives the proper credit.

Using An Old Antique for a Tea Chest

With winter in full swing.......look around the house and see if you have a piece of furniture that might work for you!

My tea chest is really an old telephone stand from the 1950's. It works perfectly for tea and the little drawer holds the gadgets!


This picture hangs over my tea chest and takes me back...it is called "The Patissere" and shows ladies indulging in sweets...



I love the event of Afternoon Tea where savories, sweets and tea are served.......today I will be joining a friend for lunch for tea.
