This is my third feature of zucchini for an Afternoon Tea Treat:
Bernideen's Zucchini Orange Coconut Tea Bread
While the zucchinis are heavy on the vines we are are ON A ROLL! There are lots of ways to bake with zucchinis:
4 eggs, 1 1/2 cups sugar, 3/4 cup of canola oil, 2/3 cup orange juice, 3 1/3 cups sifted flour, 1 1/2 tsp baking powder, 1 1/2tsp baking soda, 1 tsp salt, 2 1/2 tsp cinnamon, 1/2 tsp ground cloves, 3 tsp grated orange peel, 1 cup chopped walnuts, 1 cup shredded moist coconut and 2 cups shredded zucchini with green peel
You will need an oven preheated to 350 degrees and 2 loaf pans greased and floured (8 x 4 or 9 x 4)
In a large bowl beat eggs until thick and beat in sugar - then oil, orange juice and fold in shredded zucchini. In another bowl combine all dry ingredients. Mix all together and pour into the 2 prepared pans. Bake 30 minutes...Use a toothpick to test for doneness............let cool slightly and dump!
