Tips for Making Finger Sandwiches

Here is some helpful information for making tea sandwiches:
I find that the freshest bread is available at the busiest grocery stores! Why? Because they are turning over their bread faster. Always read the date on bread! I like to buy my bread the day before I make the finger sandwiches and freeze it that night. You should have your spread ready to go and this can be done the day before also. You will spread the filling all the way across the frozen bread and then cut off the brown edges and then slice into 4 pieces. I like whole wheat Sara Lee bread. After the sandwiches are made- place on a plate with a piece of wax paper over them and then a damp cloth over the was paper but not touching the sandwiches. This will keep them nice and fresh until time to serve!

I've frozen the bread before (works really well), but I haven't tried the wax paper with moistened paper towels over it. Thanks for the tip!
