Blueberry Cheesecake Bars

You will love these Blueberry Cheesecake Bars...preheat the oven to 350 degrees...
For the crust bottom layer you will need:
1 3/4 cups of flour, 1/2 cup confectioners sugar, 1/2 tsp salt, 2 sticks unsalted cold butter cut into small pieces, 1 tsp cold water

For the Filling you will need:
2 8 oz pkg of softened cream cheese, 1/2 cup sugar, 1/2 cup flour, 1 tsp vanilla extract, 2 eggs and 1 cup blueberry pie filling

Butter a 9 x 13 casserole pan. Mix the flour, sugar and salt to in large bowl. Add the butter and continue to cut through. Add the cold water and punch dough to form ball. Press into bottom of casserole to form a crust and bake at 350 degrees for 20 minutes.

Now, after this crust is baked - let it cool. In the winter I often put things out in the garage to cool since it is cold out there! I also have an extra refrigerator there which I use. I cook a lot so it sure comes in handy!

To prepare the filling: Mix the softened cream cheese, flour, sugar and vanilla until they are creamy. Spread on top the crust which had cooled and then swirl the cup of blueberry pie filling all around staying away from the very edge of the pan.

Bake at 350 degrees for 33-35 minutes watch closer than I did as mine were a little brown ...refrigerate when cool. Cut into small squares - 48 in all!

Mine were a little browner than I would have liked but didn't look bad after I cut them....this recipe made 48 squares!

This is perfect for your Afternoon Tea Party...a lovely sweet bar that is easy to make!

I also wanted to let you know that I follow your blog and that on my dashboard yesterday it kept showing me this post. When I would go to your blog to see it, it wasn't there. I am assuming that you had it scheduled to appear for today. It's not just your blog, I have noticed it on several other blogs. It is just strange. So, I'm wondering if blog posts show up on dashboards of followers who are just saving their post and getting it ready or what????

Angela: I have seen this happen before....I set the date for later but it goes ahead and pops out. I do it again and it works but goes ahead for followers of my blog. Who can understand these things?
